Short answer

Carbon fibre saves roughly a third of the weight, damps vibration slightly better and does not get painfully cold to hold, and it costs a good deal more. Aluminium is heavier, tougher against knocks, and cheaper. If you carry the tripod any distance regularly, carbon pays for itself in willingness to bring it. Common questions

Does carbon fibre really reduce vibration?
Somewhat, and the effect is real but smaller than marketing suggests. Carbon damps high frequency vibration better than aluminium, which matters most with long lenses, in wind, or on a bridge or floor that transmits movement. For normal video work at normal focal lengths, the difference is difficult to see.
What matters more, the legs or the head?
The head, by a wide margin, for video. A superb set of legs under a head with no counterbalance will still nose-dive and still produce jerky pans. If you are choosing where to spend, put the money in the head first and buy legs that comfortably carry the total load.
Do I need a spreader?
It helps on smooth floors and adds rigidity, and many video tripods include a mid-level or floor spreader. On uneven ground a mid-level spreader is far more useful than a floor one. If your legs have no spreader and splay on polished floors, that is what the accessory exists to fix.
How high should the tripod go?
Enough to reach your own eye level without extending the centre column, since a raised column is the least stable part of any tripod. Look at the maximum height with the column down, not the headline figure. For interviews you also want it to go low, so check the minimum height and whether the legs spread to a wide angle.
